What?

Chef Tours are culinary experiences based in and around Takigahara Farm, Ishikawa Prefecture focused on providing chefs and food professionals with the tools to develop their insights into Japanese food culture.

Participants will gain highly specialised knowledge of unusual local ingredients by visiting farms, foraging, and hunting with professional guides and will learn new gastronomic techniques by cooking with local chefs and meeting passionate producers.

Curriculum

With the Chef Tours we aim to craft experiences which ensure that participants return home with a thorough understanding of not only flavour and technique but context and history.

◎ Sourcing: understanding seasonal ingredients local to Ishikawa and meeting the producers growing, foraging, and catching them.

◎ Cooking: learning cooking techniques from Japanese chefs as well as experimenting with your own culinary expression in a fully equipped kitchen with local ingredients provided by ishinoko kitchen.

◎ Gastrophysics: understanding the science behind the food we cook, ferment, and preserve.

◎ History: exploring the historical context and culture behind ingredients and dishes.
